The Cave Saint Maurice was born in 1924 from a dozen winemakers. It is located at the foot of the Cevennes between the cities of Ales, Nimes and Uzès.

The wines presented here represent the range “Climate Cévenol Bio” which is the expression of a viticultural territory: the sunshine and the rainfall affect each year the quality of the harvests and in the end, the wines. These red, rosé and white cuvées are the result of an adaptation to the Cévenol climate, changing every year. Each vintage will be different, each label will be different.

Adapted to the environment and to its consumers, the Climat Cévenol Bio range has been labeled and certified “VEGAN” since 2017. The entire range is therefore developed without animal products or animal origin.

  •     Red:

o Red grape variety: Merlot
o PGI Cévennes
A wine that is easy to drink, silky, pleasant and easy to drink. It will delight all guests.
o Eye: Intense color with aubergine reflections.
o Nose: Aromas of red fruits, caramel and liquorice.
o Mouth: Fruity and greedy, on balance with tannins
o well melted.
o Food and wine pairing: Grilled meats, grilled or cooked vegetables, blackberry pies.
o Service temperature: 16-18 °

o Rosé grapes: Grenache & amp; Syrah
o PGI Cévennes
A nice rosé with fine and delicate aromas that will appeal to all lovers of rosés, including those who love only very clear rosés …
o Eye: Deep pink dress with a beautiful shine.
o Nose: Raspberry and redcurrant fruit, berry note.
o Roses.
o Mouth: Gourmand and lively. Tasty and balanced.
o Food and wine pairings: Aperitifs, Provencal dishes, vegetables from the sun.
o Service temperature: 10-14 °

  •    White:

o White grape variety: Chardonnay
o PGI Cévennes
A round and fresh wine, very pleasant and easy to drink. He will reap all the votes.
o Eye: Yellow color with golden-green reflections.
o Nose: Aromatic bouquet of stone fruits, crisp pistachio and pineapple.
o Mouth: A surprising wine, fruity and slightly mineral.
o Food and wine pairings: Aperitifs, seafood, grilled fish or in sauce, citrus desserts.
